Baked Cauliflower Cheese
Baked Cauliflower Cheese is one of the main dishes of Britain that is filled in as a side or even as a (vegan dish!). It's cauliflower covered in a rich cheddar sauce that is popped in the broiler until effervescent and brilliant. While maybe not the lightest dish in my collection, it is anyway undoubtedly the most scrumptious cauliflower recipe I know!
A truly extraordinary Cauliflower Cheese recipe has been on my radar since I encountered an incredible model at a notable steakhouse in Sydney a long time back!
There are a lot of recipes out there that advise you to simply boil up some cauliflower, but mind you that it will be too watery. I recommend not boiling the cauliflower and just baking it (you don't want to risk the watery cauliflower).
Ingredients:
- 2 lb cauliflower
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp ground black pepper
- 1/2 tsp nutmeg
- 6 oz cheddar cheese (or vegan cheese)
- 6 oz gyre cheese ( or vegan cheese)
- 2 cups milk or cream (or coconut milk)
- 1/2 stick butter (or vegan butter)
Directions:
Preheat oven to 430°F (200°C). Cut cauliflower into florets. place cauliflower florets into the baking dish. Place a medium size pot on your stovetop. Turn on the stovetop med-low. Add milk, cheese, and butter to the pot and simmer until smooth and cheesy. Once the cheese is fully melted pour it into the baking dish on top of the cauliflower florets. Add olive oil, salt, and black pepper nutmeg, Mix all ingredients together.
Bake in the oven for 20-25 minutes or until golden brown at the top. Take out oven safely and let stand for cool enough to serve.
