Ingredients:

For the Pickled Okra:

  • 2 pounds small or medium okra pods
  • 4 small dried chiles, cut in half
  • 2 teaspoons mustard seeds
  • 12 sprigs fresh dill
  • 4 cloves garlic, whole
  • 1 teaspoon whole peppercorns
  • ¼ cup kosher salt
  • 2 cups rice wine vinegar
  • 2 cups filtered water

Special Equipment:

  • 4 pint-sized pickling mason or canning jars (sterilized*)

Instructions:

Step 1: Prepare the Okra

  1. Wash and trim the okra by cutting the stems to about ½ inch.
  2. In each of the 4 sterilized jars, place:
    • 1 dried chile
    • ½ teaspoon mustard seeds
    • 3 sprigs of dill
    • 1 garlic clove
    • ¼ teaspoon peppercorns
  3. Pack the okra evenly into the jars, standing the pods upright and alternating the stems to fit.

Step 2: Prepare the Pickling Brine

  1. In a medium saucepan, combine the salt, vinegar, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, pour the brine over the okra in the jars, leaving space at the top (about ¼ inch from the lid).
  3. Seal the jars tightly and let them cool.

Step 3: Let the Okra Pickle

  1. Store the jars in a cool, dry spot for at least 2 weeks to allow the flavors to develop.

Tips for Sterilizing Containers:

Sterilization Instructions:

  • Wash jars and lids in hot, soapy water. Arrange them open-side up on a clean plate.
  • Boil the jars and lids in a large pot for 15 minutes.
  • Use sanitized tongs to handle the hot jars when filling them.

Additional Notes:

  • Always follow proper canning procedures to preserve the food properly.
  • For added flavor, you can experiment with other spices like turmeric or mustard powder.
