Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 hard-boiled eggs, chopped

Instructions

  1. Cook the elbow macaroni according to the package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
  3. Add the cooked macaroni to the bowl and toss to coat with the dressing.
  4. Stir in the celery, red onion, red bell pepper, parsley, and chopped eggs. Mix until evenly combined.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
