Introduction

Jiaozi, or Chinese dumplings, are a beloved dish enjoyed worldwide. These little pockets of joy are filled with savory goodness and are perfect for steaming, boiling, or pan-frying. This classic recipe combines a delicious pork and vegetable filling with homemade wrappers for an authentic experience. Whether for a family dinner or a celebration, these dumplings are sure to impress!

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 cup water (plus more as needed)
  • Pinch of salt

For the Filling:

  • 1 pound ground pork (or chicken/beef)
  • 1 cup finely chopped Napa cabbage
  • 1/2 cup finely chopped scallions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon salt

For Cooking:

  • 2 tablespoons vegetable oil (for pan-frying)
  • Water (for steaming or boiling)

Instructions

Make the Dough:

  1. In a mixing bowl, combine flour and salt. Gradually add water while stirring until a dough forms.
  2. Knead the dough on a floured surface for about 8-10 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.

Prepare the Filling:

  1. In a large bowl, combine ground pork, chopped Napa cabbage, scallions, garlic, soy sauce, sesame oil, ginger, white pepper, and salt. Mix until well combined.

Assemble the Dumplings:

  1. Roll the dough into a long rope and cut it into small pieces (about the size of a walnut). Roll each piece into a thin circle.
  2. Place a teaspoon of filling in the center of each wrapper. Fold the wrapper in half and pinch the edges to seal, creating pleats if desired.

Cook the Dumplings:

For Pan-Fried Dumplings:

  1. Heat vegetable oil in a non-stick skillet over medium heat. Place the dumplings in the skillet in a single layer.
  2. Cook for 2-3 minutes until the bottoms are golden brown.
  3. Add 1/4 cup water to the skillet and cover. Steam for 5-7 minutes until the filling is cooked through. Uncover and cook until water evaporates.

For Boiled Dumplings:

  1. Bring a large pot of water to a boil. Add the dumplings in batches and cook for 5-7 minutes until they float to the top.
  2. Remove with a slotted spoon and serve hot.

For Steamed Dumplings:

  1. Place dumplings in a steamer lined with parchment paper or cabbage leaves to prevent sticking.
  2. Steam over boiling water for 10-12 minutes.
