Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1/2 cup water (plus more as needed)
- Pinch of salt
For the Filling:
- 1 pound ground pork (or chicken/beef)
- 1 cup finely chopped Napa cabbage
- 1/2 cup finely chopped scallions
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/2 teaspoon white pepper
- 1/2 teaspoon salt
For Cooking:
- 2 tablespoons vegetable oil (for pan-frying)
- Water (for steaming or boiling)
Instructions
Make the Dough:
- In a mixing bowl, combine flour and salt. Gradually add water while stirring until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.
Prepare the Filling:
- In a large bowl, combine ground pork, chopped Napa cabbage, scallions, garlic, soy sauce, sesame oil, ginger, white pepper, and salt. Mix until well combined.
Assemble the Dumplings:
- Roll the dough into a long rope and cut it into small pieces (about the size of a walnut). Roll each piece into a thin circle.
- Place a teaspoon of filling in the center of each wrapper. Fold the wrapper in half and pinch the edges to seal, creating pleats if desired.
Cook the Dumplings:
For Pan-Fried Dumplings:
- Heat vegetable oil in a non-stick skillet over medium heat. Place the dumplings in the skillet in a single layer.
- Cook for 2-3 minutes until the bottoms are golden brown.
- Add 1/4 cup water to the skillet and cover. Steam for 5-7 minutes until the filling is cooked through. Uncover and cook until water evaporates.
For Boiled Dumplings:
- Bring a large pot of water to a boil. Add the dumplings in batches and cook for 5-7 minutes until they float to the top.
- Remove with a slotted spoon and serve hot.
For Steamed Dumplings:
- Place dumplings in a steamer lined with parchment paper or cabbage leaves to prevent sticking.
- Steam over boiling water for 10-12 minutes.
