Introduction

Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large egg whites
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup whole milk

For the Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tablespoons heavy cream or milk
  • 1 1/2 teaspoons vanilla extract
  • Pinch of salt

Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Start and end with the dry ingredients. Mix until just combined; do not overmix.
  6. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Buttercream Frosting:

  1. In a large bowl, beat the softened butter on medium speed until creamy, about 2 minutes.
  2. Gradually add the powdered sugar, one cup at a time, beating on low speed. Add the heavy cream, vanilla extract, and salt, and mix until combined.
  3. Increase the speed to high and beat for another 2-3 minutes, until the frosting is light and fluffy. Adjust the consistency with more cream or powdered sugar if needed.

Assembling the Cake:

  1. Place one cake layer on a serving plate or cake stand. Spread a generous amount of frosting on top.
  2. Place the second cake layer on top and frost the top and sides of the cake evenly.
  3. Decorate as desired with piping, sprinkles, or edible flowers. Slice and serve!
