Chicken Broccoli Rice Casserole Recipe

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional, for topping)
  • 1 tablespoon butter (if using breadcrumbs for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, and steamed broccoli.
  3. In a separate bowl, mix the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the soup mixture over the chicken, rice, and broccoli, and stir everything together until well combined.
  5. Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
  6. Top with shredded cheddar cheese, spreading it out evenly over the casserole.
  7. If using breadcrumbs, melt butter in a small pan, add breadcrumbs, and stir to coat. Sprinkle the buttered breadcrumbs over the casserole.
  8. Cover with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
