Introduction

These Chicken Enchiladas are a perfect weeknight meal that’s both delicious and easy to prepare. With tender shredded chicken, a flavorful homemade enchilada sauce, and melted cheese, these enchiladas are sure to become a family favorite. Whether you're serving them for dinner or preparing them in advance for a meal prep, this recipe is versatile and full of flavor!

Ingredients

  • 2 cups cooked, shredded chicken (rotisserie chicken works great!)
  • 10-12 corn or flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil (for sautéing)
  • Salt and pepper to taste
  • Chopped cilantro (optional, for garnish)
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium pan, heat olive oil over medium heat. Add the chopped onion and sauté until softened (about 3-4 minutes).
  3. Add the shredded chicken, garlic powder, cumin, chili powder, salt, and pepper. Stir to combine and heat for another 2-3 minutes.
  4. Pour in half of the enchilada sauce and the diced green chilies. Stir and cook for 1-2 minutes until well combined. Remove from heat.
  5. In a 9x13-inch baking dish, pour a thin layer of enchilada sauce on the bottom of the dish.
  6. Warm the tortillas in the microwave for 20-30 seconds to make them more pliable. Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
  7. Once all tortillas are rolled and in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with both types of cheese.
  8. Cover with aluminum foil and bake for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove the foil and bake for an additional 5 minutes until the top is golden and slightly crispy.
  10. Garnish with chopped cilantro, and serve with sour cream if desired. Enjoy your homemade Chicken Enchiladas!
