These Chicken Enchiladas are a perfect weeknight meal that’s both delicious and easy to prepare. With tender shredded chicken, a flavorful homemade enchilada sauce, and melted cheese, these enchiladas are sure to become a family favorite. Ingredients
- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 10-12 corn or flour tortillas
- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 tablespoon olive oil (for sautéing)
- Salt and pepper to taste
- Chopped cilantro (optional, for garnish)
- 1/4 cup sour cream (optional, for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium pan, heat olive oil over medium heat. Add the chopped onion and sauté until softened (about 3-4 minutes).
- Add the shredded chicken, garlic powder, cumin, chili powder, salt, and pepper. Stir to combine and heat for another 2-3 minutes.
- Pour in half of the enchilada sauce and the diced green chilies. Stir and cook for 1-2 minutes until well combined. Remove from heat.
- In a 9x13-inch baking dish, pour a thin layer of enchilada sauce on the bottom of the dish.
- Warm the tortillas in the microwave for 20-30 seconds to make them more pliable. Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
- Once all tortillas are rolled and in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with both types of cheese.
- Cover with aluminum foil and bake for 20 minutes, or until the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5 minutes until the top is golden and slightly crispy.
