Introduction
This Chicken Stir Fry is a quick and healthy meal that's packed with colorful vegetables and tender chicken, all tossed in a delicious savory sauce. Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 bell pepper, sliced into strips
- 1 medium carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1/4 cup soy sauce (low sodium preferred)
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon fresh grated ginger
- 1 tablespoon cornstarch (optional, for thickening sauce)
- 2 tablespoons water (if using cornstarch)
- Cooked rice, for serving
- Sesame seeds (optional, for garnish)
- Green onions (optional, for garnish)
Instructions
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside.
- If using cornstarch, dissolve it in 2 tablespoons of water to make a slurry. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-6 minutes until the chicken is browned and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add the onion, bell pepper, carrot, and broccoli. Stir-fry the vegetables for 4-5 minutes until they are tender-crisp.
- Add the chicken back to the skillet along with the sauce mixture. Stir to combine and cook for another 2-3 minutes until everything is well coated and heated through.
- If using cornstarch, add the slurry to the pan and stir until the sauce thickens slightly.
