Ingredients
For the Filling:
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 pound ground lamb or beef
- 1 cup frozen peas and carrots
- 1 cup frozen corn
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Mashed Potato Topping:
- 2 pounds potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/4 cup heavy cream
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
Prepare the Filling:
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Sauté the onions and garlic until fragrant and softened, about 3-4 minutes.
- Add the ground lamb or beef and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato paste, Worcestershire sauce, thyme, and paprika. Cook for 1-2 minutes.
- Add the beef broth, peas, carrots, and corn. Simmer for 5-7 minutes until the mixture thickens slightly. Season with salt and pepper. Remove from heat.
Prepare the Mashed Potato Topping:
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
- Add butter, heavy cream, and milk. Mash until smooth and creamy. Stir in cheddar cheese (if using) and season with salt and pepper.
Assemble and Bake:
- Spread the meat filling evenly in a 9x13-inch baking dish.
- Top with the mashed potatoes, spreading them out evenly to cover the filling. Use a fork to create ridges for extra texture.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
- Let cool for 5 minutes before serving. Enjoy!
