Introduction

Ingredients

For the Filling:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound ground lamb or beef
  • 1 cup frozen peas and carrots
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Mashed Potato Topping:

  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

Prepare the Filling:

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté the onions and garlic until fragrant and softened, about 3-4 minutes.
  3. Add the ground lamb or beef and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the tomato paste, Worcestershire sauce, thyme, and paprika. Cook for 1-2 minutes.
  5. Add the beef broth, peas, carrots, and corn. Simmer for 5-7 minutes until the mixture thickens slightly. Season with salt and pepper. Remove from heat.

Prepare the Mashed Potato Topping:

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
  2. Add butter, heavy cream, and milk. Mash until smooth and creamy. Stir in cheddar cheese (if using) and season with salt and pepper.

Assemble and Bake:

  1. Spread the meat filling evenly in a 9x13-inch baking dish.
  2. Top with the mashed potatoes, spreading them out evenly to cover the filling. Use a fork to create ridges for extra texture.
  3. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  4. Let cool for 5 minutes before serving. Enjoy!
