Introduction

Ingredients

  • 2 cups cooked, shredded chicken (rotisserie chicken works great!)
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup onion, finely chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 pie crusts (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large saucepan, melt butter over medium heat. Add onions, carrots, celery, and garlic powder, and sauté for 5-6 minutes until vegetables are tender.
  3. Stir in the flour and cook for an additional minute to create a roux (this will help thicken the sauce).
  4. Gradually whisk in the chicken broth and milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  5. Add the shredded chicken, peas, thyme, salt, and pepper. Stir to combine, and cook for another 2-3 minutes until everything is well coated. Remove from heat.
  6. Roll out one pie crust and line the bottom of a 9-inch pie dish with it. Pour the chicken mixture into the pie dish.
  7. Top with the second pie crust, trimming any excess dough. Pinch the edges to seal the crust, and make a few slits in the top to allow steam to escape.
  8. Brush the top crust with a beaten egg for a golden finish.
  9. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
