Fluffy Blueberry Pancakes

Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1 cup fresh blueberries
- 1 tsp vanilla extract
- Butter or oil for cooking
Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, stirring gently until just mixed.
- Fold in the blueberries.
- Heat a non-stick pan over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the pan and cook for 2-3 minutes until bubbles form on the surface.
- Flip and cook for another 2 minutes until golden brown.
- Serve warm with maple syrup or additional blueberries.
