Ingredients

  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Butter Crust: In a large bowl, whisk together flour, salt, and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a large bowl, combine apple slices, granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, and allspice. Mix well and set aside.
  3. Roll the Dough: On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie pan. Transfer to the pie pan and trim the edges, leaving a slight overhang. Roll out the second disc for the top crust.
  4. Assemble the Pie: Fill the bottom crust with the apple mixture, mounding it slightly in the center. Dot with butter cubes. Place the top crust over the filling and seal the edges by crimping or pressing with a fork. Cut small slits in the top for ventilation.
  5. Bake: Brush the top crust with the beaten egg for a golden finish. Preheat the oven to 375°F (190°C) and bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
