Ingredients
For the Butter Crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6-8 tablespoons ice water
For the Apple Filling:
- 6-7 medium Granny Smith apples, peeled, cored, and sliced thin
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 tablespoon lemon juice
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons unsalted butter, cut into small cubes
- 1 egg, beaten (for egg wash)
Instructions
- Make the Butter Crust: In a large bowl, whisk together flour, salt, and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling: In a large bowl, combine apple slices, granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, and allspice. Mix well and set aside.
- Roll the Dough: On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie pan. Transfer to the pie pan and trim the edges, leaving a slight overhang. Roll out the second disc for the top crust.
- Assemble the Pie: Fill the bottom crust with the apple mixture, mounding it slightly in the center. Dot with butter cubes. Place the top crust over the filling and seal the edges by crimping or pressing with a fork. Cut small slits in the top for ventilation.
- Bake: Brush the top crust with the beaten egg for a golden finish. Preheat the oven to 375°F (190°C) and bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool and Serve: Let the pie cool for at least 2 hours before slicing. Serve with vanilla ice cream or whipped cream if desired.
