  • 1 medium carrot, sliced
  • 1 stalk celery, sliced
  • 1 tablespoon red curry paste
  • 1 teaspoon chili flakes (adjust to taste)
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 4 ounces egg noodles (or any noodles of choice)
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha (optional, for extra spice)
  • 1/2 cup coconut milk (optional, for creaminess)
  • Juice of 1 lime
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and grated ginger. Sauté until fragrant and softened, about 3 minutes.
  2. Stir in sliced carrot, celery, red curry paste, and chili flakes. Cook for another 2 minutes to release the flavors.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld.
  4. Stir in shredded chicken and noodles. Cook until the noodles are tender, about 5-7 minutes.
  5. Add soy sauce, sriracha (if using), and coconut milk (optional). Squeeze in lime juice and stir well.
  6. Ladle soup into bowls and garnish with green onions and fresh cilantro. Serve hot and enjoy!
