- 1 teaspoon chili flakes (adjust to taste)
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 4 ounces egg noodles (or any noodles of choice)
- 1 tablespoon soy sauce
- 1 tablespoon sriracha (optional, for extra spice)
- 1/2 cup coconut milk (optional, for creaminess)
- Juice of 1 lime
- 2 green onions, sliced (for garnish)
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and grated ginger. Sauté until fragrant and softened, about 3 minutes.
- Stir in sliced carrot, celery, red curry paste, and chili flakes. Cook for another 2 minutes to release the flavors.
- Pour in chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld.
