Zucchini and Potato Bake
Delicious Zucchini and Potato Bake with layers of zucchini, potatoes, cheese, and a savory seasoning blend. Perfect for a family dinner or side dish!
Ingredients
- 2 medium zucchini, sliced
- 3 medium potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the sour cream, milk, garlic powder, thyme, salt, and pepper.
- In a greased baking dish, layer the sliced potatoes and zucchini. Pour the sour cream mixture over the top, spreading evenly.
- Top with shredded cheddar cheese and drizzle with olive oil.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden brown.
- Garnish with fresh parsley and serve warm.
