Ingredients
For the Barbacoa:
- 3 lbs beef chuck roast (cut into large chunks)
- 3 chipotle peppers in adobo sauce (chopped)

- 1 tbsp apple cider vinegar
- 1 tbsp lime juice (fresh)

- 1 tsp black pepper
- 1 ½ cups beef broth
- 2 bay leaves
Instructions
1. Sear the Meat (Optional, but Recommended)
- Heat a large skillet over medium-high heat.
- Sear beef chunks for 2-3 minutes per side to lock in flavor.
2. Slow Cooker Method
- Place seared beef in the slow cooker.
- Add chipotle peppers, adobo sauce, garlic, onion, vinegar, lime juice, and spices.
- Pour in beef broth and add bay leaves.
- Cover and cook on LOW for 6-8 hours (or HIGH for 4-5 hours) until fork-tender.
3. Instant Pot Method
- Use the Sauté function to sear the beef.
- Add all other ingredients and pressure cook on HIGH for 60 minutes.

4. Stovetop Method
