Ingredients
- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp sugar (to enhance caramelization)
- 3 cloves garlic, minced
- ½ cup dry white wine (optional)
- 6 cups beef broth (or vegetable broth for a vegetarian version)
- 1 tbsp Worcestershire sauce (optional, for added depth)
- 1 bay leaf
- ½ tsp fresh thyme (or ¼ tsp dried thyme)
- Salt & pepper to taste
- 1 small baguette, sliced
- 1 ½ cups shredded Gruyère cheese (or Swiss cheese)
Instructions
1. Caramelize the Onions
- In a large pot, melt butter and olive oil over medium-low heat.
- Add sliced onions, salt, and sugar. Cook for 30-40 minutes, stirring occasionally, until deeply golden brown and caramelized.
2. Build the Soup Base
- Add minced garlic and cook for 1 minute.
- Pour in white wine (if using) and deglaze the pot, scraping up the browned bits.
- Stir in beef broth, Worcestershire sauce, bay leaf, and thyme. Simmer for 15 minutes.
- Season with salt and pepper to taste. Remove bay leaf.
3. Prepare the Toasted Baguette
- Preheat oven to 400°F (200°C).
- Place baguette slices on a baking sheet and toast for 5 minutes, flipping halfway.
4. Assemble & Broil
- Ladle soup into oven-safe bowls.
- Top each bowl with toasted baguette slices and a generous amount of shredded Gruyère cheese.
- Place under the broiler for 2-3 minutes, until cheese is bubbly and golden.
5. Serve & Enjoy!
- Let cool slightly and serve warm.
