Chicken Kiev is a classic dish featuring juicy chicken breasts stuffed with flavorful garlic herb butter, coated in crispy breadcrumbs, and fried to golden perfection.
Ingredients:
- 4 boneless, skinless chicken breasts
- ½ cup unsalted butter, softened
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon juice
- ½ tsp salt
- ½ tsp black pepper
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- ½ tsp paprika
- ½ tsp dried thyme
- ½ cup oil (for frying)
Instructions:
- Make the Herb Butter: In a bowl, mix butter, garlic, parsley, lemon juice, salt, and black pepper. Shape into a log, wrap in plastic wrap, and freeze for 15 minutes.
- Prepare the Chicken: Using a sharp knife, make a deep pocket in each chicken breast without cutting all the way through.
- Stuff the Chicken: Slice the chilled butter into four pieces and stuff one into each pocket. Seal the opening by pressing the edges together.
- Bread the Chicken:
- Dredge each stuffed chicken breast in flour.
- Dip into beaten eggs.
- Coat with breadcrumbs mixed with paprika and thyme.
- Chill for Firmness: Place the breaded chicken in the fridge for 15 minutes to help it hold its shape.
- Cook the Chicken: Heat oil in a pan over medium heat. Fry the chicken for 3-4 minutes per side until golden brown.
- Bake to Finish: Transfer to a preheated 375°F (190°C) oven and bake for 15 minutes until the chicken is fully cooked.
- Rest & Serve: Let rest for a few minutes before serving to prevent butter from spilling out.
