These Garlic Herb Roasted Red Potatoes are crispy on the outside, tender on the inside, and packed with flavor! A perfect side dish for any meal.
Ingredients
- 1 ½ lbs red potatoes, cut into bite-sized chunks
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp smoked paprika
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- ¼ cup grated Parmesan cheese (optional, for extra flavor)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with oil.
2. Prepare the Potatoes
- In a large bowl, toss the red potato chunks with olive oil, garlic, oregano, thyme, smoked paprika, salt, and black pepper.
