Ingredients
- 1 ½ lbs beef stew meat, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 medium carrots, sliced
- 2 ribs celery, sliced
- 1 large potato, diced
- 1 cup green beans, chopped
- 1 cup corn (fresh, frozen, or canned)
- 1 cup peas (fresh or frozen)
- 1 tsp dried thyme
- ½ tsp dried oregano
- 1 bay leaf
- Salt & pepper to taste
Instructions
1. Brown the Beef
- Heat 1 tbsp olive oil in a large pot over medium-high heat.
- Add beef in batches, searing until browned on all sides (about 4-5 minutes per batch). Remove and set aside.
2. Sauté the Aromatics
- Lower heat to medium, add the remaining 1 tbsp olive oil.
- Cook onion and garlic for 2-3 minutes until fragrant.
3. Simmer the Soup
- Return beef to the pot. Add beef broth, water, diced tomatoes, thyme, oregano, bay leaf, salt, and pepper.
