Ingredients:

  • 4 lb leg of lamb
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme
  • 1 tsp salt
  • 1 tsp black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the lamb.
  4. Roast for 1½–2 hours, until internal temp is 135°F for medium-rare.
  5. Let rest before slicing.
