Ingredients:
- 4 lb leg of lamb
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp rosemary, chopped
- 1 tbsp thyme
- 1 tsp salt
- 1 tsp black pepper
Instructions:
- Preheat oven to 375°F (190°C).
- Mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the lamb.
- Roast for 1½–2 hours, until internal temp is 135°F for medium-rare.
- Let rest before slicing.
