Ingredients

For the Flounder Rolls:

  • 4 flounder fillets (thin and even in size)
  • ½ cup lump crab meat (or shrimp, chopped)
  • ½ cup breadcrumbs (Panko or regular)
  • ¼ cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon zest

Instructions

1. Preheat Oven & Prep Fillets

Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil. Pat dry the flounder fillets and season lightly with salt and pepper.

2. Make the Stuffing

In a bowl, mix crab meat, breadcrumbs, Parmesan, parsley, lemon zest, Old Bay seasoning, and egg until well combined.

3. Roll the Flounder

Place a spoonful of stuffing on each flounder fillet and carefully roll it up from the thinner end. Secure with toothpicks if needed and place seam-side down in the baking dish.

4. Bake the Flounder Rolls
